A sweet and sour summer treat that great on hot dogs, cheese, naan, and more!

I kept it real simple for this batch. You could definitely make it more complex with cloves, anise, and other flavors – it’s good to keep it simple sometimes, too!
Ingredients:
-A hearty pint of green tomatoes, chopped
-About 1/3 cup red onion, finely diced
-About 4oz malt vinegar
-1/4 cup neutral cooking oil, like grapeseed
-2tbsp brown sugar
-3-4 cloves garlic, minced
-Hot peppers to your liking, diced
-A few whole peppercorns and a pinch of salt

Simple Steps:
1. Combine tomatoes, oil, onions, garlic, hot peppers in a saucepan over low heat. Cook 3-4 minutes.
2. Add in brown sugar, salt, peppercorns, and a splash of the vinegar. Cook for 15 minutes, stirring occasionally.
3. Add in remaining vinegar and cook for about 35-40 minutes until you’ve reached desired consistency. *You may need to add a splash of water or additional oil depending on how juicy those green tomatoes are.
