Zucchini Patties




Makes  about 15 patties

3 medium zucchini
3 eggs
1 cup bread crumbs
1 cup feta cheese
2 scallions, chopped
2-3 cloves garlic, minced
2/3 cup chopped leafy herbs (e.g. parsley, dill, cilantro, basil, thyme, oregano)
1 tbsp olive oil
1 tsp baking powder
salt and pepper to taste

Simple Steps: 

Shred the zucchini. Using a fine colander, press the shredded zucchini repeatedly to strain. Let sit for 10 minutes and press again.

Preheat oven to 350F. Line a baking sheet with parchment paper.

Combine all ingredients.

Make palm-size patties and place on the baking sheet.

Bake until golden brown, about 20-30 minutes

Serving suggestion – serve over rice, red lentils, or a bed of greens. Top with tzatziki sauce (that’s right, more dill, more garlic!)
