Lentil Salad with Fresh Herbs

This simple and healthy salad is loaded with fresh flavors. It can be made ahead, saved for days, and added to your meal prep schedule.

Fresh herbs can dress up so many dishes. Parsley in particular is just packed with vitamins like A and K, and antioxidants as well. I’m not a doctor, but… why wouldn’t you want more parsley in your life?


Lentil Salad with Fresh Herbs

parsley, garlic chive, mint


– 3 cups green / brown lentils, cooked
– 1/2 cup chopped parsley
– 1/2 cup chopped hearty greens (kale, collards, etc)
– 1/4 cup chopped mint
– 2tbsp chopped garlic chives
– 2 tbsp olive oil
– Juice of 1 lemon
– 1 tsp cumin
– a dash of allspice
– salt and pepper to taste

Simple Steps:

1. Combine all the ingredients. Toss and serve warm or chilled.


Great for meal prep, dish to pass, leftovers, side dish
Vegan, gluten free
