
Sliced cucumbers, some punchy sidekick veggies and a simple dressing… let it rest and you’re good to go for this sweet, spicy, umami-ee side dish
For a batch of 2 servings:
Ingredients:
Slice thinly: 1 regular size cucumber, 1 scallion, hot pepper to your liking!
1-2 garlic cloves, minced
8-10 shiso leaves
3tbsp white wine vinegar (or sub rice vinegar)
3tbsp mirin (contains alcohol)
2tbsp sesame seeds
1tbsp soy sauce (or liquid aminos)
1tsp sesame oil

Simple Steps
1. Combine vinegar, mirin, soy sauce, and sesame oil.
2. Add garlic and hot pepper, stir well to combine.
3. Stack and roll shiso leaves “into a cigar.” Finely cut into ribbons and toss in the sauce.
4. Add in cucumber and scallion and toss to combine.
5. Refrigerate for at least 30 minutes; Add sesame seeds before serving.
