This easy and tasty tart is great appetizer for a spring brunch or dinner. Simple steps and it’s ready in 20minutes.

Ingredients:
1. 1 sheet of puff pastry
2. 3/4 cup ricotta
3. 3 tbsp lemon juice
4. 1/2 lb fresh raw asparagus
5. Salt and pepper
Simple steps:
1. Preheat oven to 400F. Line a baking sheet with parchment paper and roll out the puff pastry.
2. Splice any chunky asparagus stalks lengthwise.
3. Combine half of the lemon juice with the ricotta. Toss the asparagus with the remaining half.
4. Shmear the ricotta mix on the puff pastry. Leave about 1″ on each edge. Fold up and press the edges of the dough.
5. Lay out the stalks, top with salt and pepper.
6. Bake for about 20 minutes, until crust edges are lightly brown.
