Crunchy raw asparagus, chopped to bite size and mixed with creamy goat cheese makes a great combo with a dash of lemon over spring greens.

Ingredients:
(per serving)
* 3-4 asparagus stalks, raw
* 1tbsp goat cheese
* 1 tbsp lemon juice
* 2 tbsp extra virgin olive oil
* salad greens (pea shoots and arugula pictured above)
* salt and pepper to taste
Simple Steps:
1. Chop asparagus stalks on the bias to bite size.
2. In a small bowl, combine EVOO and lemon juice. Add the goat cheese and gently shmush it in.
3. Toss the asparagus in the goat cheese mix. Add salt and pepper to taste.
4. Put it all on the greens and enjoy!
