
Chimichurri is a delightful condiment centered around some of my favorite ingredients: parsley, vinegar, & garlic star in this simple and robust topping.
While it is typically suggested to accompany meat dishes, I can attest to chimichurri’s ability to spruce up some very simple veggies as well, which is obviously my preferred method of consumption.
*The measurements are not specific – play around with the ratios to find your perfect blend.
*Use fresh herbs for best flavor and texture!

You’ll need:
-A hearty bunch of parsley, minced fine
-A bit of oregano, minced fine
-Garlic (3-5 cloves), minced
-1/4 cup extra virgin olive oil
-1/4 cup red wine vinegar
-a hot pepper of your preferred heat level, finely minced
-a pinch to a dash of salt
Combine ingredients. Ready immediately, best if given an hour or so to meddle and mingle.
