Lightly sauteed and seasoned, chunky chopped cauliflower lends a hearty flavor and crunchy texture to your Tuesday night taco bar.

DIY Taco Seasoning:
2parts chili powder
1part paprika
1part salt
1part cumin
Fresh garlic greens, (how much? A bunch!)
Fresh oregano, to taste

Mix the first 4 ingredients well; Add the garlic greens (or any form of garlic on hand!) and fresh oregano in the pan while cooking.

Adding arugula always makes it better!
