That’s a little snapshot of my breakfast prep this morning. If you’re not eating fresh fruit or veg for breakfast in peak produce season, you’re missing out.
I was taught to core tomatoes, to chop off the ends of carrots and squash. And while they don’t have to go to the garbage if you make vegetable stock, feed them to your hens, or just compost them, you can also eat them and to me that sounds like the best option.
So here’s the quick and dirty tip, blink and you’ll miss it: chop through the hard part, divvy it up into multiple slices or chunks and it blends in easily with the rest of the tender fruit which = more for you to enjoy!
