Simple spring flavors of asparagus and mint topped with feta and viniagrette – so bright and delicious!

Ingredients:
(per serving)
* 4-5 stalks fresh raw asparagus.
* 3 tbsp feta
* 3 tbsp fresh mint, chopped
* 3 tbsp white wine vinegar
* Extra virgin olive oil and pepper, to taste
Simple Steps:
1. Remove woody ends of asparagus stalks; chop on the bias to bite size.
2. Toss asparagus with vinegar.
3. Top with mint, feta, EVOO, and pepper.
