Cucumber Mint Summer Salad

As summer’s juicy treats begin to ripen, salads can shift away from so many greens to these chunky, flavorful dishes. Chop up the cukes and dress ’em in a little vinegar. This one is great for potlucks or as a refreshing treat after a long day in the sun!

You’ll need:

2 medium cucumbers, chopped into bite-size chunks
1 small red onion, or 2-3 scallions, diced
3 cloves garlic, minced
1/4 cup mint, finely chopped
1/4 cup white wine vinegar
2 tbsp extra virgin olive oil
a dash of salt and a pinch of pepper

Simple Steps:

In a medium bowl, combine vinegar, oil, garlic, and onion. Toss to coat. Add in the remaining ingredients. Serve immediately or chill it for a bit!
